Although summer has not officially arrived my home has already turned into a heat box. We rent/live in an older home that has no central air and our kitchen window is small and unable to hold an air conditioner. Which means I am now very reluctant to turn on the oven.
So, I thought this was the perfect time to test out some no bake dessert options.
These are the criteria the winners had to meet.
- No oven required
- Simple to make
- Used common ingredients in my pantry
This is something I’ve been making since last summer. The PB and chocolate combo is a real winner with my kids.
My 7 year old son and 5 year old daughter already make these PB balls by themselves, I just melt the chocolate, that’s how easy it is.
They freeze wonderfully so I make a large batch then have them in the freezer for a quick dessert option. (I have to admit they don’t last more than a week when we make them)
I love how they use just a little bit maple syrup, making them a pretty healthy dessert option.
I have been testing out many granola bar recipes and there were
Ones I liked by my husband did not
He liked and I did not
did not hold together well
kind of gross
the list goes on… Well I decided to try this last recipe and
I Found A Winner!!!!
I love that this dessert also has only a few TBSP of maple syrup. It uses dates as the real sweetener. I added some peanuts, sunflower seed and a very small handful of vegan chocolate chips. I did test out the suggestion to roast the almonds and yes it is turning on the oven but only for 10 minutes, next time I plan on trying without roasting almonds and I’ll update post on of there was a big taste difference.
My other favorite thing about this recipe is how versatile it is. You can do an endless combination or just make it with what you have on hand.
#3. NO Bake Vegan Chocolate Mousse Cheesecake
I did a bit of a Frankenstein with this recipe by mixing two different recipes.
For the crust I used the Easy Vegan Cheesecake recipe by Minimalist Baker
And for the filing I used the No Bake Chocolate Mousse Cheesecake by The Busy Baker
I chose to mix the recipes because
- I already had the silken tofu on hand
- I wanted a healthier crust and Minimalist Baker just uses dates and Nuts. ( I used Pecans that I had)
This dessert is simple to make and I used the Minimalist Bakers technique of using a muffin tin and having a strip of parchment paper to take out easily. Worked like a charm even with the Chocolate Mousse.
I couldn’t make this post without adding my families favorite and super easy go to no bake dessert.

I make mine as a chocolate ice cream and I whip up some coconut whipped cream and some granola. Then just make layer of all three. It’s a great creamy cool treat.
