I really enjoy Asian food. Sometimes it feels like the Asian meals I prepare can be time consuming to make or need a long list of ingredients I don’t always have on hand.
That’s why I was so happy to find this recipe by Ania of Lazy Cat Kitchen.
I altered the recipe a bit.
- I used regular long grain white rice instead of sushi rice because it’s what I had on hand.
- I prepared my tofu slightly different
I have found if I just press the tofu, marinate it with Tamari sauce, then pan fry it with sesame oil until it is nice and crisp it comes out delicious and saves me prep time.
What I loved most about this recipe is that it got the wheels in my brain turning with all the different possibilities. Ania gives you three variations on the recipe, but I believe there are endless amounts of variations. Best of all they can easily be tailored to your likes.
I had leftovers, so the next day for lunch my husband made a tasty stir fry using the leftovers.
