Let’s face it everyone struggles with what to cook at one point or another. I do a lot of sifting and testing online recipes. So here are my 5 favorite weeknight recipes. These recipes are relatively quick to make, they are kid approved, and delicious.
This is a pretty easy meal and is super tasty. The best part is some shells can have spinach and some shells can be made without the spinach for my extra picky eaters.
I’ve been cooking this soup for years now. I have a recipe that was passed along to me by my sister from her friend so I’m not certain where the original came from but this recipe from Vegan Richa is almost identical to mine. I just don’t blend my soup. Pair it with some fresh bread or even just a simple salad and you have a great dinner.
I have tested many Mac and Cheese recipes over the years and they were always missing something. Yes, nothing will ever taste exactly like real cheese but this dish has such fantastic flavor you won’t be able to stop eating it. I make sure to make extra so we have leftovers for lunch the next day.
This meal is like our takeout night meal. It gets pretty frequent use in our home probably once every two weeks. Or if I get a special request for it from my daughter.
#5 Chili from epicurious
We love chili in our house all year round. It’s so versatile you can eat it with bread or tortilla chips or arepas, those are Colombian corn patties. You can also be creative with it if you love peppers throw some of those in there or slice up some avocados and place on top once serving. You can’t go wrong with chili.
So these are my favorite recipes, I also like to rotate my recipes to keep everyone’s tastebuds happy. But these are my constants.
